Easy 7 Layer Taco Dip With Sour Cream and Taco Seasoning

What's in 7 Layer Dip?

There are plenty of variations to this 7 layer dip out there, but this is by far my favorite. It's simple, to the point and mega delicious. The layers in my 7 Layer Dip are…

  • Seasoned Refried Beans
  • Guacamole
  • Sour Cream
  • Shredded Cheese
  • Diced Tomato
  • Sliced Olives
  • Sliced Green Onions

You can get creative and use your own favorite ingredients in there. I've used refried black beans in place of the traditional pinto beans and it's great! If you like it a little spicy, try topping with pickled jalapeños. Fresh pico de gallo is always a welcome addition to this dip too!

How To Make Seven Layer Dip

  • Start by amping up some classic refried beans with some Rotel diced tomatoes and taco seasoning. You can either make your own refried beans (here's a great recipe) or you can use the canned stuff for a quick alternative. Spread the beans into the bottom of a 7×11″ casserole dish.
    • PRO TIP – The beans do not need to be heated prior to making the dish. If you make homemade, let them cool before layering.
  • Whip up a super simple guacamole – trust me, fresh will be best! Buuuut… I know sometimes we're in a hurry, so buying a package of pre-made guacamole will work too.
  • Spread a layer of sour cream over top the guacamole.
    • PRO TIP – stir the sour cream really well so it's super creamy and spreadable.
  • Top with a layer of finely shredded cheese. I like to use sharp cheddar cheese, but you can use a fiesta blend or taco blend too!
  • Dice up some Roma tomatoes and scatter all over the top.
    • PRO TIP – use Roma tomatoes because they're less juicy, which will keep your dip from becoming too soggy.
  • Finally add the last two layers – sliced black olives and green onions! Keep refrigerated until ready to serve.

How Long Does 7 Layer Dip Last?

If kept covered tightly with plastic wrap, 7 Layer Dip can last up to 5 days in the refrigerator.

Keep in mind that guacamole can start to turn brown quickly once exposed to oxygen. If you're prepping this dip ahead of time, the guacamole should be fine as long as it's covered completely with the sour cream.

  • 1 16 oz can refried beans, or 2 cups homemade
  • 1 10 oz can diced tomatoes with green chiles
  • 1 to 2 tbsp taco seasoning
  • 3 medium avocados
  • 1 lime, juiced (about 1 1/2 tbsp)
  • 1/4 cup cilantro, chopped
  • 1 tsp garlic salt
  • 1 1/2 cups sour cream
  • 2 cups cheddar cheese, finely shredded
  • 1/3 cup black olives, sliced
  • 3/4 cup Roma tomatoes, diced
  • 1/3 cup green onions, sliced
  • Combine the refried beans, rotel diced tomatoes and taco seasoning in a bowl and whisk until combined. Spread into an even layer in a 7"x11" casserole dish.

  • In a separate bowl combine the avocado, lime juice, cilantro and garlic salt. Mash until desired consistency is reached and then spread into an even layer over the beans.

  • Stir the sour cream until nice and smooth, then spread into an even layer over the guacamole.

  • Sprinkle the shredded cheese over the top of the sour cream, then top with the diced tomatoes, black olives and green onions.

  • Cover with plastic wrap and keep chilled until ready to serve.

Dip can be made up to 2 days in advance, and stored for up to 5 days in the refrigerator. Just keep in mind that the guacamole can turn brown when exposed to oxygen.
